Cucumber Salad Recipe

Try this quick and easy cucumber, onion and green pepper salad which is perfect for a picnic any time of year. This salad is made with Truvia® calorie-free sweetener and has 50% fewer calories* and 50% less sugar* than the regular sugar-sweetened version. Makes 35 servings.

  • 3 cucumbers, washed, peeled and sliced

  • 14 of a small onion, washed and sliced thinly

  • 14 of a green pepper, washed and sliced thin

  • 2 large cloves of garlic, cleaned and diced

  • 2 tsp salt

  • 12 teaspoon ground black pepper

  • 150g Truvía® calorie-free sweetener

  • 100ml vinegar


  • 1.

    In a large serving bowl, mix the sliced cucumbers, onion, green pepper and garlic.

    Sprinkle on salt and pepper.

  • 3.

    Mix the Truvia calorie-free sweetener and vinegar in a small bowl

  • 4.

    Pour the small bowl contents over cucumber mixture and mix well.

  • 5.

    Cover and refrigerate for at least 6 hours.

    Serve with a slotted spoon.
