Banana Nut Muffins

These banana nut muffins are a great breakfast, or mid-morning snack, and with fewer calories they are not to be missed!

For the muffins

  • 2 large bananas mashed

  • 14 tsp melted (unsalted) butter

  • Pinch of salt

  • 12 tsp baking powder

  • 1 egg

  • 2 tsp of Truvia

  • 2 tsp of caster sugar

  • 125g plain flour

For the crumb topping

  • 2 tbsp of plain flour

  • 2 tbsp porridge oats

  • 130g Walnuts

  • 3 tbsp butter (unsalted) softened

  • 2 tsp Truvia

  • 2 tsp of caster sugar

    Preheat oven to 180 C

  • 2.

    To make the crumb topping, add all of the crumb topping ingredients into a bowl. Stir until crumb consistency and set aside.

  • 3.

    To make the muffins, mash the bananas and place in a separate bowl, along with salt, baking powder, baking soda, egg, Truvia, sugar and flour. Mix until all combined and thickened. (Use a hand mixer for an even quicker mix!)

  • 4.

    Spoon muffin mix into muffin cases and sprinkle the crumb topping on all muffins.

    Bake for 25 mins until golden.
