Strawberry and Coconut Cream Ice Pops

Strawberry and Coconut Ice Pops are perfect for when the sun starts shining and the deck chairs are out in the back garden. Having a BBQ?   • 250g Fresh strawberries, washed, hulled and quartered.

  • 300g Natural unsweetened yoghurt

  • 300g Coconut Cream

  • 4 tsp Truvia

    Blend the yoghurt, coconut cream and Truvia together well. Gently crush half the strawberries with a fork and stir through the cream mixture until only just combined. Chop the remaining strawberries and fold into the mixture.

    Pour into ice lolly moulds, tap well to ensure the mixture reaches the bottom of the mould well and freeze for 4-6 hours until solid. Best consumed within 1 month.
