Chicken salad with a Tahini and Avocado Dressing

Bored of your usual salads? Try this delicious, fresh and green Chicken salad. We've created a Tahini and Avocado salad dressing made with Truvia calorie-free sweetener.

Serving size






  • 1 Small ripe Avocado, peeled, stoned and sliced.

  • 1 Small bag of fresh peas

  • 1 Head of chicory, outer leaves removed and sliced lengthways

  • 1 Small bag mixed salad leaves

  • 2 Chargrilled chicken breasts, sliced

  • 1 Small handful of fresh mint & basil

  • Salt and pepper to taste

Tahini and Avocado dressing

  • 1 Tbsp of Tahini

  • 1 Lemon, zest and juice

  • 1 tsp Truvia

  • 12 small ripe avocado, peeled, stoned and roughly chopped

  • 1 Small handful Coriander leaves

  • 2 Tbsp water

  • Pinch of salt


  • 1.

    Arrange all of the prepped salad ingredients on a large platter.

  • 2.

    To make the dressing, blitz all of the ingredients in a food blender until smooth.

  • 3.

    When ready to serve drizzle the sauce over the salad to taste.

  • 4.

    Season as desired.

  • 5.

    Serve with crusty bread for a complete lunch.
