Brazilian Mango and Kale Salad

Ingredients

  • 1 ripe mango, diced

  • 250g bag of Kale

  • 75g Pine nuts, toasted

  • 2 Tbsp olive oil

  • Salt and pepper to taste

MANGO DRESSING

  • 12 large, ripe mango, roughly diced

  • 2 Tbsp water

  • 2 Tbsp Extra virgin olive oil

  • 2 Tbsp white wine vinegar

  • 1 tsp sugar

  • 12 tsp sea salt

  • 2 Tbsp lemon juice

Directions

  • 1.

    Sauté the kale in a pan with the olive oil for 3-4 mins until just slightly wilted.

  • 2.

    In a bowl add the kale, diced mango and toasted pine nuts and toss together.

  • 3.

    Combine all of the dressing ingredients into a blender and blitz until smooth.

  • 4.

    Serve the salad drizzled with the dressing to taste. Season as required.
