Ginger Biscuits with stevia

Our delicious ginger biscuits are perfect with a cup of tea in the colder weather, especially as they are made with zero-calorie sweetness from the stevia leaf.

Ingredients

  • 60g honey

  • 50g butter

  • 30g soft brown sugar

  • 25g Truvia

  • 1 egg yolk

  • 150g plain flour

  • 12 tsp bicarbonate of soda

  • 2 tsp ground ginger

Directions

    Preheat the oven to 190oC/170Oc fan. Line 2 baking sheets with baking paper.

    Melt the honey and butter together over a gentle heat. Remove from heat and stir in the sugar, Truvia and egg yolk.

  • 3.

    Sift plain flour, bicarbonate of soda and ginger into a bowl, add the wet ingredients and mix thoroughly until you get a smooth consistency.

  • 4.

    Roll teaspoons of the mixture (approx. 15/20g) into balls and place them onto the baking paper allowing space in between for spreading when baking. Bake in the oven for 12-15 minutes until the biscuits are a rich golden brown and cracked on the surface.

  • 5.

    Remove the biscuits from the oven, leave on the baking tray to firm up. Once firm transfer them to a cooling rack with a palette knife.
