Truvia Vegan Blueberry Mousse Pots

These beautiful blueberry pots will do wonders at dinner parties or even for a night in with the family. Packed with antioxidants from the blueberries and sweetened with Truvia, zero-calorie sweetness from the stevia leaf.

Ingredients

  • 135g raw cashews
  • 300g frozen blueberries
  • 100ml coconut milk
  • 3 Tbsp. coconut oil (melted)
  • 1 Tbsp. maple syrup
  • 1 Tsp. vanilla extract
  • 1 Tbsp. Truvia

Directions

  1. Place all of the ingredients (except the berries) in a blender – whizz for 3 minutes until very smooth.
  2. Add in frozen berries and whizz for a further minute.
  3. Enjoy straight away
