Double Chocolate Muffins

Double Chocolate Muffins with stevia

These Double Chocolate Muffins are really easy to make and a great way to get your chocolate fix!

  • 3 eggs

  • 20g Truvia

  • 65ml milk

  • 20g cocoa

  • 35g coconut flour

  • 2 tbsp. olive oil

  • 1 tsp. vanilla extract

  • 1 tsp. baking powder

  • 100g dark chocolate chips


  • 1.

    Preheat oven to 160oC. Grease a muffin baking tin; you can also use muffin papers.

    In a bowl mix the eggs, Truvia, vanilla, oil and milk. Add the cocoa powder, coconut flour, baking powder and 70g of the chocolate chips. Mix well until incorporated.

  • 3.

    Fill each cupcake hole with the mixture until ¾ full and top each muffin with the remaining dark chocolate chips.

  • 4.

    Bake for 20-25 minutes or until a cake tester comes out clean, remove from oven and let the muffins cool completely in the baking pan, when they are cool, remove from the pan.
