Citrus Tart

Inspired by the traditional French lemon tart, Tarte au Citron, this version combines three citrus flavours together in a refreshing and creamy dessert. Sweetened with Truvía® Calorie-Free Sweetener this tart has only 3 grams of sugar per serving and 25% fewer calories than the sugar-sweetened version.

  • Pastry for single-crust 9-inch pie

  • 1 large lemon, grated zest and juice

  • 1 orange, grated zest and juice

  • 1 lime, grated zest and juice

  • 160ml fat free evaporated skim milk

  • A pinch of salt

  • 2 tsp cornflour

  • 2 egg yolks

  • 2 whole eggs

  • 36g Truvía® Calorie-Free Sweetener

  • 1 tsp of citrus zest medley


  • Light whipped topping


  • 1.

    Preheat oven to 204° C.

  • 2.

    Bake pie crust according to directions. Approximately 10-12 minutes. Cool on rack.

  • 3.

    Reduce oven temperature to 160°C.

  • 4.

    Grate zest of lemon, orange and lime and combine.

  • 5.

    Squeeze the juice of each of the fruits. Combine the juices and measure 23 cup.

  • 6.

    In a small bowl, combine milk, salt and corn flour; stir.

  • 7.

    In a medium bowl, whisk together the egg yolks, whole eggs, Truvía® Calorie-Free Sweetener and 1 tsp of zest medley.

  • 8.

    Add milk mixture; whisk to blend.

  • 9.

    Add juice mixture; whisk to blend.

  • 10.

    Pour into cooled crust.

  • 11.

    Bake for 25 minutes just until set. Cool on wire rack.

  • 12.

    Refrigerate before serving. Top with light whipped topping if desired.
