Ingredients

  • 4 servings of rice noodles, (We used Pad Thai noodles)

  • 2 Tbsp gluten-free soy sauce

  • 2 Tbsp gluten-free oyster sauce

  • 2 tsp Truvia calorie-free sweetener

  • 1 tsp cornstarch

  • 1 tsp toasted sesame oil

  • 200g stir-fry beef or thinly sliced top sirloin

  • 3 Tbsp peanut oil

  • 150g broccoli florets

  • 250g of sliced onions

  • 1 Tbsp rice wine vinegar

  • 1 cup sliced spring onions

Directions

  • 1.

Bring 1 litre of water to a boil in a large saucepan over high heat (place a lid on saucepan to boil faster).

  • 2.

Once water is boiling, turn the heat off and add the noodles, cover and let sit for 30 minutes. Strain the noodles in a colander and set aside until ready to use.

  • 3.

Combine the soy sauce, oyster sauce, Truvía® calorie-free sweetener, cornstarch, and toasted sesame oil in a medium sized bowl. Toss with beef and set aside until ready to use.

  • 4.

Add peanut oil to wok over medium-high heat. Once oil turns shiny, add the broccoli and onions to the wok and cook for 3 minutes, stirring frequently.

  • 5.

Add the beef mixture to the wok. Toss until meat is just browned, about 2 minutes.

  • 6.

Stir in the strained rice noodles, rice wine vinegar, and spring onions. Toss until noodles soak up the sauce.

  • 7.

Remove from heat and serve immediately.
